  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (15 oz) mixed vegetables, drained or use fresh vegetables like carrots, peas, and corn
  • 2 cups cooked pasta macaroni or your choice
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
  4. Stir in the diced tomatoes, cream of mushroom soup, and mixed vegetables, combining thoroughly.
  5. Add the cooked pasta to the skillet and mix evenly.
  6. Season the mixture with Italian seasoning, salt, and pepper, adjusting according to your taste.
  7. Transfer the casserole mixture into a greased 9×13 inch baking dish.
  8. Top with shredded cheddar cheese.
  9. Bake in the preheated oven for 25-30 minutes or until bubbly and golden.
  10. Remove from the oven and let it cool for a few minutes before serving.
  11. Garnish with fresh parsley if desired, and enjoy your hearty hobo casserole!

Notes
