  • 1 lb ground beef Can substitute with ground turkey or chicken for a leaner option.
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese Optional: Additional Parmesan for topping.
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 large eggs
  • 1/4 cup milk
  • 2 tbsp fresh parsley, chopped Or 1 tbsp dried.
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup For topping.

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare a loaf pan by lightly greasing it or lining it with parchment paper for easy removal.
  2. In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, chopped onion, and minced garlic. Mix well to incorporate all ingredients.
  3. Add the eggs and milk to the mixture, followed by the parsley, Italian seasoning, salt, and pepper. Mix until everything is evenly combined, but do not overwork the mixture to avoid a dense meatloaf.
Cooking
  1. Transfer the meat mixture into the prepared loaf pan, shaping it into a loaf form.
  2. Spread the ketchup evenly over the top of the meatloaf, and sprinkle additional Parmesan on top if desired.
  3. Bake in the preheated oven for about 1 hour or until the internal temperature reaches 160°F (70°C) and the juices run clear.
  4. Once cooked, remove from the oven and let it rest for 10-15 minutes before slicing to help the juices redistribute.
  5. Serve warm with your favorite side dishes, or use leftovers in sandwiches or wraps the following day.

Notes

Consider mixing in finely chopped bell peppers, carrots, or celery for added flavor and nutrients. For a kick, add a dash of hot sauce or red pepper flakes to the meat mixture. This meatloaf freezes well; cool completely before wrapping tightly and thaw in the refrigerator before reheating.
