  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper Optional, can be omitted.
  • 1 cup shredded cheddar cheese Divided for topping.
  • 1/4 cup ketchup
  • 1/4 cup mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups milk
  • 1 1/2 cups Bisquick mix Use gluten-free for a gluten-free option.
  • 3 large eggs

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook the ground beef, chopped onion, and green bell pepper (if using) until the beef is browned and vegetables are tender. Drain any excess grease.
  3. Remove the skillet from the heat. Stir in the ketchup, mustard, salt, and pepper until well mixed. Add half of the shredded cheddar cheese and mix until evenly distributed.
Batter Preparation
  1. In a mixing bowl, whisk together the Bisquick mix, milk, and eggs until smooth.
Assembly and Baking
  1. Pour the beef mixture into a greased 9x13 inch baking dish. Evenly spread the Bisquick batter over the top of the beef mixture.
  2. Place the dish in the preheated oven and bake for 25 minutes.
  3. Carefully remove the casserole from the oven. Sprinkle the remaining cheddar cheese on top and return to the oven.
  4. Bake for an additional 10-15 minutes or until the cheese is melted and bubbly and a toothpick comes out clean when inserted in the center.
  5. Let it cool for a few minutes before slicing. Serve warm and enjoy!

Notes

This dish is great for meal prep! Refrigerate leftovers in an airtight container for up to 3 days or freeze portions for up to 2 months. Customize with toppings like pickles or additional veggies.
