Preparation
- Preheat your oven to 425°F (220°C) for baking the biscuits later.
- In a large mixing bowl, combine the 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of salt.
- Add the cold, diced butter and mix until the mixture is crumbly.
- Make a well in the center and pour in 3/4 cup of milk. Stir until just combined.
- Transfer the dough onto a floured surface and gently knead it 4-5 times until it forms a cohesive dough.
- Roll it out to about 1-inch thickness and cut out biscuits using a round cutter.
- Place the biscuits on a baking sheet lined with parchment paper.
Baking
- Bake the biscuits in the preheated oven for 12-15 minutes or until they are golden brown on top.
Making the Gravy
- While the biscuits are baking, cook the sausage in a large skillet over medium heat. Break it apart into small pieces and cook until browned.
- Sprinkle 1/4 cup of flour over the cooked sausage and stir to combine. Cook for about 1-2 minutes until the flour is lightly browned.
- Gradually pour in 2 cups of milk while stirring to prevent lumps. Add 1 teaspoon of black pepper, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder. Continue stirring until the gravy thickens, usually about 5-7 minutes.
- Taste the gravy and adjust with salt and more pepper if necessary.
Serving
- Once the biscuits are done baking, remove them from the oven. Split the biscuits in half and ladle the sausage gravy generously over them.
Notes
For the best biscuits and gravy, chill the butter and don't overwork the dough. You can customize the gravy with different spices or make it vegetarian by using a meat alternative.
