  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 2 medium zucchinis, sliced Choose firm zucchinis.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup crushed tomatoes Canned or fresh can be used.
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese Feel free to change the type of cheese.
  • 1 cup breadcrumbs (optional for topping) Optional for added texture.
  • 2 tbsp olive oil
  • to taste fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the ground beef, breaking it apart with a spatula, and cook until browned (about 5-7 minutes). Drain excess grease if necessary.
  4. Add the chopped onion and minced garlic to the skillet and sauté for about 3-4 minutes until the onion becomes translucent.
  5. Stir in the sliced zucchini and crushed tomatoes, seasoning with Italian seasoning, salt, and black pepper. Allow the mixture to simmer for about 5 minutes.
  6. Remove the skillet from heat and mix in breadcrumbs if using.
Cooking
  1. In a greased 9x13 inch baking dish, layer the beef and vegetable mixture.
  2. Sprinkle the shredded cheddar cheese evenly over the top.
  3. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  4. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
  5. Garnish with freshly chopped parsley before serving.

Notes

This casserole can be served with a green salad or steamed vegetables. It's great for meal prepping and can be stored in an airtight container for up to three days.
