Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat.
- Add the ground beef, breaking it apart with a spatula, and cook until browned (about 5-7 minutes). Drain excess grease if necessary.
- Add the chopped onion and minced garlic to the skillet and sauté for about 3-4 minutes until the onion becomes translucent.
- Stir in the sliced zucchini and crushed tomatoes, seasoning with Italian seasoning, salt, and black pepper. Allow the mixture to simmer for about 5 minutes.
- Remove the skillet from heat and mix in breadcrumbs if using.
Cooking
- In a greased 9x13 inch baking dish, layer the beef and vegetable mixture.
- Sprinkle the shredded cheddar cheese evenly over the top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
- Garnish with freshly chopped parsley before serving.
Notes
This casserole can be served with a green salad or steamed vegetables. It's great for meal prepping and can be stored in an airtight container for up to three days.
