  • 1 piece bell pepper, diced (any color) Use your preferred color of bell pepper.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add the diced onion, garlic, and bell pepper. Sauté until the vegetables are softened, about 4-5 minutes.
  3. Stir in the diced tomatoes, chicken broth, chili powder, cumin, smoked paprika, salt, and pepper. Bring the mixture to a simmer and cook for approximately 10 minutes, allowing the flavors to meld.
Layering & Baking
  1. In a 9x13-inch baking dish, start layering your casserole. Place 3 whole-wheat tortillas on the bottom.
  2. Add half of the chicken mixture on top, followed by half of the cheese.
  3. Repeat the layers: add 3 more tortillas, the remaining chicken mixture, and then the remaining cheese on top.
  4. If using diced green chiles, sprinkle them over the top layer of cheese.
  5. Cover the dish with aluminum foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
  7. Allow the casserole to cool for a few minutes before slicing. Garnish with fresh cilantro or parsley for that extra touch of freshness.
