Preparation
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Add the diced onion, garlic, and bell pepper. Sauté until the vegetables are softened, about 4-5 minutes.
- Stir in the diced tomatoes, chicken broth, chili powder, cumin, smoked paprika, salt, and pepper. Bring the mixture to a simmer and cook for approximately 10 minutes, allowing the flavors to meld.
Layering & Baking
- In a 9x13-inch baking dish, start layering your casserole. Place 3 whole-wheat tortillas on the bottom.
- Add half of the chicken mixture on top, followed by half of the cheese.
- Repeat the layers: add 3 more tortillas, the remaining chicken mixture, and then the remaining cheese on top.
- If using diced green chiles, sprinkle them over the top layer of cheese.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
- Allow the casserole to cool for a few minutes before slicing. Garnish with fresh cilantro or parsley for that extra touch of freshness.
