Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon. Once cooked, drain excess fat.
- Stir in the taco seasoning mix and water. Bring the mixture to a simmer and cook for 5 minutes. Remove from heat.
Layering
- In a greased 9x13 inch baking dish, place 4 tortillas at the bottom, overlapping them slightly if needed.
- Spread half of the refried beans on top of the tortillas. Then, layer half of the seasoned beef mixture, followed by half of the diced tomatoes, onions, and jalapeños. Top with a generous layer of cheddar and Monterey Jack cheese.
- Place another 4 tortillas on top, adding the remaining refried beans, beef mixture, tomatoes, onions, and jalapeños. Cover with the remaining cheeses.
Baking
- Spread the sour cream on top of the casserole and drizzle with Taco Bell sauce.
- Cover the dish with aluminum foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Once baked, let the casserole sit for about 10 minutes before serving. This allows the ingredients to settle and makes slicing easier.
- Top with fresh cilantro if desired, and serve with additional Taco Bell sauce on the side for dipping.
Notes
You can assemble the casserole a day in advance. Just cover it tightly with plastic wrap and refrigerate until you are ready to bake it. This casserole freezes beautifully. Allow it to cool completely, then wrap it tightly in foil or place it in an airtight container for up to three months. To reheat, thaw in the fridge overnight and bake as directed.
