Ingredients
  

For the Meatballs
  • 1 pound ground beef (or ground turkey)
  • 2 cups fresh spinach, chopped
  • 3 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1 piece egg
  • ½ cup grated Parmesan cheese
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • ½ cup mozzarella cheese, cut into small cubes (for stuffing)
For the Sauce
  • 2 cups marinara sauce
  • optional Fresh basil, for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground beef, chopped spinach, minced garlic, breadcrumbs, egg, grated Parmesan cheese, onion powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are thoroughly incorporated.
  3. Take a small amount of the mixture (about 2 tablespoons) and flatten it in your palm. Place a cube of mozzarella cheese in the center and fold the meat around the cheese to form a ball.
  4. Arrange the stuffed meatballs on a baking sheet lined with parchment paper.
Cooking
  1. Bake in the preheated oven for about 20-25 minutes or until thoroughly cooked and browned on the outside.
  2. While the meatballs are baking, gently heat the marinara sauce in a saucepan over medium heat.
Serving
  1. Serve the cooked meatballs atop a bed of pasta with marinara sauce, or serve them as an appetizer. Garnish with fresh basil if desired.

Notes

These meatballs can be frozen for meal prep. For a low-carb option, use almond flour instead of breadcrumbs and zucchini noodles instead of pasta. Make sure to seal the meat tightly around the cheese to avoid leaks while baking.
