  • 1 can (10.5 oz) diced tomatoes with green chilies Adds flavor and spice.
  • 1 tsp chili powder Adjust based on heat preference.
  • 1 tsp cumin Enhances the flavor profile.
  • Salt and pepper to taste Season to preference.
  • 1 bag (32 oz) frozen tater tots Provides a crispy topping.
  • 2 cups shredded cheddar cheese Feel free to use your favorite cheese.
  • Fresh cilantro or green onions for garnish (optional) Adds freshness to the dish.

Method
 

Preparation
  1. In a skillet over medium heat, brown the ground beef until fully cooked, breaking it apart as it cooks. Drain excess fat.
  2. Stir in the diced onion and garlic, cooking until the onion becomes translucent, about 3-4 minutes.
  3. Transfer the beef mixture to the slow cooker.
  4. Add the corn, black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Stir until evenly combined.
  5. Layer the tater tots on top of the beef mixture in the slow cooker. Do not stir; leaving them on top ensures they retain their texture.
Cooking
  1. Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  2. About 30 minutes before serving, sprinkle the shredded cheddar cheese over the tater tots. Cover and let the cheese melt.
Serving
  1. Once done, serve hot, garnished with cilantro or green onions if desired.

Notes

For ingredient swaps, consider using ground turkey or chicken for a lighter option. You can also add your favorite vegetables for extra nutrition. This casserole pairs well with fresh salad or crusty bread.
