Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat from the meat.
- Add the chopped onion to the skillet and cook until soft, about 5 minutes. Season with salt and pepper.
- Stir in the cream of mushroom soup, beef broth, and Worcestershire sauce. Mix well until all ingredients are combined.
- Incorporate the frozen mixed vegetables into the meat mixture and stir until evenly distributed.
- Transfer the meat mixture to a greased 9x13 inch baking dish. Spread it evenly across the bottom.
- Top the casserole with a layer of prepared mashed potatoes, smoothing it out to cover the meat mixture completely.
- If using, sprinkle shredded cheddar cheese over the mashed potatoes.
Baking
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and the casserole is bubbly.
Serving
- Let it cool slightly before serving. Garnish with fresh parsley if desired.
Notes
For best results, allow the casserole to cool completely before storing. It can be stored in the fridge for up to 3-4 days or frozen for up to 3 months.
