- Heat a large skillet over medium heat. Add a drizzle of olive oil.
- Add ground turkey or beef to the skillet, breaking it into small pieces. Season with salt, pepper, oregano, and basil. Cook until browned, about 5-7 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Pour marinara sauce over the cooked meat, stirring to combine. Bring the mixture to a simmer.
- While the sauce simmers, layer the zucchini slices in parallel to the skillet, ensuring they overlap slightly.
- In a bowl, combine ricotta cheese, Parmesan, egg, and a pinch of salt and pepper. Mix well until smooth.
- Spoon the ricotta mixture over the zucchini, spreading it evenly. Top with half of the shredded mozzarella.
- Add another layer of zucchini, then the marinara mixture, followed by the remaining mozzarella cheese on top.
- Cover the skillet with a lid and reduce heat to low. Let it cook for about 20-25 minutes, or until the cheese is bubbly and the zucchini is tender.
- Remove from heat, let it cool slightly, then garnish with fresh basil before serving.
