  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz pinto beans, drained and rinsed
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 can 8 oz tomato sauce
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 can 16 oz refrigerated biscuit dough
  • 1 tsp garlic powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef and diced onion until the meat is cooked through and the onion is transparent.
  3. Drain any excess fat from the skillet.
  4. Mix in the kidney beans, pinto beans, diced tomatoes (with juices), tomato sauce, taco seasoning, garlic powder, and season with salt and pepper. Stir until well combined and let it simmer for about 5 minutes to allow the flavors to meld.
  5. In a separate bowl, spread the sour cream over the top of the meat mixture in the skillet, followed by an even layer of shredded cheddar cheese.
  6. Take the biscuit dough and cut it into quarters. Arrange the biscuit pieces on top of the cheese layer, spreading them out so they cover the entire surface.
  7. Place the skillet in the preheated oven and bake for 25-30 minutes, or until the biscuit dough is golden brown and baked through.
  8. Remove from oven and allow to cool for a few minutes before serving.

Notes

You can customize the heat by adding diced jalapeños or hot sauce. Consider adding sliced green onions, olives, or avocado on top before serving for added flavor and texture. For a vegetarian option, substitute ground beef with lentils and mushrooms.
