  • 1 pound ground beef
  • 4 medium-sized potatoes, thinly sliced Use starchy potatoes like Russets for fluffiness.
  • 1 large onion, diced
  • 1 can green beans, drained (15 oz)
  • 1 can cream of mushroom soup (10.5 oz) Half used for layering.
  • 1 cup shredded cheddar cheese Can swap for mozzarella or pepper jack.
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 2 tablespoons olive oil For sautéing the onion.
Optional Garnish
  • Fresh parsley, for garnish Add for presentation.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent.
  3. Add the ground beef to the skillet. Break it up with a spatula and cook until fully browned. Drain excess fat if needed.
  4. Season the beef mixture with garlic powder, onion powder, salt, and pepper. Stir well to combine.
Assembly
  1. In a large baking dish, spread a layer of the sliced potatoes.
  2. Layer half of the browned ground beef and onion mixture over the potatoes.
  3. Add a layer of green beans on top of the beef.
  4. Pour half of the cream of mushroom soup over the green beans, spreading it evenly.
  5. Repeat the layers: another layer of potatoes, followed by the remaining beef, the remaining green beans, and finally the rest of the soup.
Baking
  1. Cover the dish tightly with foil and bake for 1 hour.
  2. After an hour, remove the foil and sprinkle the shredded cheddar cheese on top.
  3. Bake uncovered for an additional 10-15 minutes, or until the cheese is melted and the potatoes are fork-tender.
  4. Once done, let it cool for a few minutes before serving. Garnish with chopped fresh parsley if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months. Feel free to add other vegetables, such as bell peppers or corn, for extra flavor and nutrition. Add a dash of hot sauce or cayenne pepper for a spicy kick.
