  • 1 pound ground beef (preferably lean)
  • 1 cup green or brown lentils, rinsed You can use either green or brown lentils.
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 2 cups vegetable broth
  • 2 cups frozen mixed vegetables (carrots, peas, corn)
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • to taste salt and pepper
  • 1 package (32 ounces) frozen tater tots
  • 1 cup shredded cheese (optional, for topping) Use this if you want an extra cheesy finish.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced bell pepper, sautéing for another 2-3 minutes until softened.
  4. Increase the heat to medium-high and add the ground beef. Cook until browned and crumbly, about 5-7 minutes. Drain excess fat if necessary.
  5. Stir in the rinsed lentils, vegetable broth, mixed vegetables, paprika, oregano, salt, and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes, or until the lentils are tender.
  6. Once the lentils are cooked, transfer the mixture to a greased 9x13 inch baking dish.
  7. Evenly layer the frozen tater tots over the top of the mixture.
  8. If desired, sprinkle shredded cheese over the tater tots for an extra cheesy finish.
  9. Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
  10. Allow the casserole to cool for a few minutes before serving.

Notes

This casserole pairs well with a light salad or steamed vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat it in the microwave or oven until warmed through.
