Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic and diced bell pepper, sautéing for another 2-3 minutes until softened.
- Increase the heat to medium-high and add the ground beef. Cook until browned and crumbly, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the rinsed lentils, vegetable broth, mixed vegetables, paprika, oregano, salt, and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes, or until the lentils are tender.
- Once the lentils are cooked, transfer the mixture to a greased 9x13 inch baking dish.
- Evenly layer the frozen tater tots over the top of the mixture.
- If desired, sprinkle shredded cheese over the tater tots for an extra cheesy finish.
- Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
- Allow the casserole to cool for a few minutes before serving.
Notes
This casserole pairs well with a light salad or steamed vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat it in the microwave or oven until warmed through.
