Preparation
- Pop the popcorn kernels using your preferred method (stovetop or microwave). Make sure to remove any unpopped kernels and place the popcorn in a large mixing bowl.
- In a separate bowl, combine the candy corn, salted peanuts, pretzel bites, m&ms, and chocolate chips. Stir these together gently until well mixed.
Coating
- In a small saucepan over low heat, melt the butter. Once melted, add the brown sugar, cinnamon, and salt. Stir continuously until the mixture bubbles slightly.
- Once ready, remove the saucepan from the heat and mix in the vanilla extract.
Combine and Toss
- Pour the warm mixture over the popcorn in the large mixing bowl.
- Gently toss the popcorn, ensuring that it’s evenly coated with the melted mixture. Then, fold in the dry ingredients you’ve prepared earlier. Keep tossing until all ingredients are well mixed.
Cool and Serve
- Spread the snack mix onto a baking sheet lined with parchment paper to cool for about 30 minutes.
- Once cooled, transfer the Harvest Popcorn Snack Mix into an airtight container. Store it at room temperature for up to one week.
Notes
You can adjust this mix by adding seasonal treats like caramel bits, mini marshmallows, or dried fruit. For variations, consider pumpkin spice or using red and green candies for the holidays.
