Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium-high heat.
- Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Once the turkey is browned, add chopped onion and minced garlic to the skillet. Sauté for 3-4 minutes until the onions are translucent.
- Add the sliced zucchini to the skillet, stir, and cook for another 5 minutes until the zucchini begins to soften.
- Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Bring the mixture to a slight boil, then reduce the heat to low and let it simmer for about 5 minutes.
- Transfer half of the turkey mixture into a baking dish. Sprinkle half of the mozzarella cheese on top. Layer the remaining turkey mixture, followed by the rest of the cheese.
Baking
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Cool slightly before serving.
Notes
This casserole is great on its own or served with a light salad. For a complete meal, consider pairing with garlic bread or steamed broccoli.
