  • 1 lb ground turkey Lean protein option
  • 2 medium zucchinis, sliced Provides low-calorie bulk

  • 1 cup shredded mozzarella cheese For topping the casserole
  • 1 cup diced tomatoes Canned or fresh can be used
  • 1 teaspoon Italian seasoning To flavor the casserole
  • ½ teaspoon salt To taste
  • ¼ teaspoon black pepper To taste
  • 1 tablespoon olive oil For cooking the turkey

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  4. Once the turkey is browned, add chopped onion and minced garlic to the skillet. Sauté for 3-4 minutes until the onions are translucent.
  5. Add the sliced zucchini to the skillet, stir, and cook for another 5 minutes until the zucchini begins to soften.
  6. Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Bring the mixture to a slight boil, then reduce the heat to low and let it simmer for about 5 minutes.
  7. Transfer half of the turkey mixture into a baking dish. Sprinkle half of the mozzarella cheese on top. Layer the remaining turkey mixture, followed by the rest of the cheese.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  2. Cool slightly before serving.

Notes

This casserole is great on its own or served with a light salad. For a complete meal, consider pairing with garlic bread or steamed broccoli.
