Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
- Add the diced onion to the skillet. Cook until the onion is translucent, about 3-5 minutes.
- Stir in the black beans, corn, diced tomatoes, and taco seasoning. Cook for an additional 5 minutes.
- Remove the skillet from heat and mix in the sour cream until fully combined.
Assembly
- In a casserole dish, layer half the beef mixture, then sprinkle half the cheese on top.
- Add a layer of crushed tortilla chips over the cheese.
- Repeat the layers with the remaining beef mixture, cheese, and then finish with another layer of crushed tortilla chips.
- Top the casserole with any remaining cheese to create a golden crust.
Baking
- Bake in the preheated oven for about 25-30 minutes, until the cheese is bubbly and slightly golden.
- Remove from the oven and allow to cool for a few minutes before garnishing with chopped green onions.
