Ingredients
  

Meat and Base
  • 1 pound ground beef (or Italian sausage) Substitute with Italian sausage for a spicier twist.
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 28 ounces can crushed tomatoes
  • 2 cups beef or chicken broth
  • 8 ounces uncooked lasagna noodles, broken into pieces
Cheese
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1 cup grated Parmesan cheese Use half for mixing with ricotta.
Seasoning
  • 1 tablespoon Italian seasoning
  • to taste Salt and pepper
  • Fresh basil or parsley for garnish (optional)

Method
 

Cooking the Meat
  1. In a large skillet over medium-high heat, add the ground beef and diced onion. Cook until the meat is browned and the onions are soft, about 5-7 minutes.
Adding Garlic
  1. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Combining Ingredients
  1. Pour in the crushed tomatoes, and add the broth, Italian seasoning, salt, and pepper. Bring this mixture to a simmer.
  2. Once simmering, stir in the broken lasagna noodles, ensuring they are submerged in the liquid. Cover the skillet and let it cook for 15-20 minutes, stirring occasionally, until the noodles are al dente.
Mixing Ricotta
  1. While the noodles cook, mix the ricotta cheese with half of the Parmesan in a separate bowl. Season with salt and pepper to taste.
Layering in the Skillet
  1. After the noodles are cooked to perfection, dollop spoonfuls of the ricotta mixture over the pasta. Gently stir to combine without completely mixing.
Adding Mozzarella
  1. Sprinkle half of the mozzarella cheese over the top of the skillet. Cover and let cook for an additional 5 minutes, allowing the cheese to melt and bubble.
Finishing Touches
  1. Remove the lid and sprinkle the remaining mozzarella and Parmesan cheese on top. Cover again and cook for 3-5 more minutes until the cheese is melted and slightly golden.
Serving
  1. Remove from heat, garnish with fresh basil or parsley if desired, and serve hot.

Notes

This Easy Skillet Lasagna can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat on the stovetop over low heat until warmed through. For a lighter version, substitute ground beef with ground turkey or chicken.
