Ingredients

Pasta and Meat
  • 8 oz. lasagna noodles, broken into pieces Traditional or no-boil lasagna sheets
  • 1 lb. ground beef (or Italian sausage) Can use ground turkey or chicken for a lighter option
  • 1 small onion, diced
  • 2 cloves garlic, minced
Sauce and Seasoning
  • 24 oz. marinara sauce
  • 2 tsp. Italian seasoning
  • Salt to taste
  • Pepper to taste
Cheeses
  • 15 oz. ricotta cheese
  • 2 cups shredded mozzarella cheese Feel free to add more for extra cheesiness
  • 1/2 cup grated Parmesan cheese
Garnish
  • Fresh basil optional, for garnish

Method

Preparation
  1. In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula.
  2. Add the diced onion to the skillet and cook until soft, about 5 minutes. Stir in the minced garlic for an additional minute until fragrant.
  3. Pour in the marinara sauce, mixing well with the meat. Adjust seasoning with salt, pepper, and Italian seasoning.
  4. Stir the broken lasagna noodles into the sauce mixture. Ensure the noodles are fully submerged in the sauce for even cooking.
Cooking
  1. Cover the skillet and let simmer for 20-25 minutes, or until the noodles are tender. Stir occasionally to prevent sticking.
  2. Remove the cover, spoon dollops of ricotta cheese over the top, and sprinkle the shredded mozzarella and Parmesan generously.
  3. Cover again and let the cheese melt over low heat for about 5-10 minutes, or until gooey and golden.
  4. Once melted, remove from heat. Garnish with fresh basil if desired. Scoop out servings and enjoy your Easy Skillet Lasagna!

Notes

For a vegetarian version, substitute the meat with a mix of your favorite vegetables. If you enjoy a bit of heat, add crushed red pepper flakes to the meat mixture or sprinkle on top before serving. You can prepare the skillet lasagna ahead of time and store it in an airtight container for later use.
