  • 1 pound ground beef (or turkey) Choose lean ground turkey for a healthier option.
  • 1 can (15 oz) chili (without beans)
  • 1 can (10.5 oz) cream of mushroom soup Can substitute for a lighter alternative.
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese Plus more for topping.
  • 1 package (32 oz) frozen tater tots
  • 1 tablespoon taco seasoning Optional, adjust to taste.
  • 1/2 cup chopped onions Optional.
  • 1/4 cup chopped green bell pepper Optional.
  • Salt and pepper to taste

  • sour cream
  • sliced jalapeƱos
  • chopped green onions

Method
 

Preparation
  1. In a skillet over medium heat, cook the ground beef (or turkey) until browned. Drain excess fat.
  2. In a large bowl, combine the cooked meat, chili, cream of mushroom soup, diced tomatoes, and taco seasoning. Mix until well combined.
  3. Spray the inside of your crock pot with cooking spray or use a liner for easier cleanup.
Layer Ingredients
  1. Pour half of the meat mixture into the bottom of the crock pot.
  2. Next, sprinkle half of the tater tots over the meat mixture.
  3. Add a layer of shredded cheddar cheese.
  4. Repeat the layers with the remaining meat mixture, tater tots, and cheese.
Cooking
  1. Cover and cook on low for 4 to 6 hours, or on high for about 2 to 3 hours. The tater tots should be crispy, and the cheese melted and bubbly.
Final Touches
  1. Once cooking is complete, sprinkle additional cheddar cheese on top and let it melt before serving.
  2. Scoop portions into bowls and top with any desired toppings such as sour cream, sliced jalapeƱos, or chopped green onions.

Notes

Stores well in the refrigerator for up to 3 days. Reheat in the microwave or oven until warmed through.
