Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  3. Add the diced onion and minced garlic to the skillet. Cook until the onions are soft and translucent, about 3-4 minutes.
  4. Stir in the black beans, sweet corn, diced tomatoes with green chilies, and taco seasoning. Mix until everything is well combined and heated through.
  5. Transfer the beef mixture to a greased 9x13 inch casserole dish, spreading it evenly.
  6. Sprinkle the shredded cheese over the beef mixture. Then, arrange the frozen tater tots on top of the cheese in a single layer.
  7. Bake in the preheated oven for about 30-35 minutes, or until the tater tots are golden brown and crispy.
  8. Let the casserole cool for a few minutes before serving. Garnish with chopped green onions and serve with sour cream if desired.

Notes

Customize it by adding vegetables like bell peppers or zucchini for added nutrition. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. This casserole can be prepared ahead of time and assembled the day before baking.
