  • 1.5 pounds ground beef (80% lean) Opt for an 80/20 blend for best results.
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 cup milk
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 0.25 cup parsley, chopped (optional)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon ground cumin (optional)
  • 0.5 cup ketchup (for topping) Will caramelize as it bakes.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, minced garlic, eggs, Worcestershire sauce, parsley (if using), salt, pepper, and cumin (if desired). Mix until just combined.
  3. Transfer the mixture into a loaf pan, or shape it directly on a lined baking sheet.
  4. Spread the ketchup evenly on top of the meatloaf.
  5. Bake for 1 hour or until the internal temperature reaches 160°F (71°C).
  6. Let the meatloaf rest for 10-15 minutes before slicing.
  7. Slice and serve with your favorite sides.

Notes

For best results, avoid overmixing the ingredients. You can also experiment with different flavors and ingredients for variations of meatloaf.
