Preparation
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, brown the ground beef or turkey (if using). Drain any excess fat.
- Stir in the chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for an additional minute.
- Stir in the black beans, kidney beans, diced tomatoes, corn, and chili seasoning. Mix well and let it simmer for about 10 minutes, allowing flavors to meld. Add salt and pepper to taste.
Cornbread Preparation
- In a mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar (if using).
- In another bowl, whisk together the milk, oil, and egg. Gradually stir the wet ingredients into the dry until just combined.
Assembly and Baking
- Spoon the chili mixture into a greased 9×13 inch baking dish.
- Pour the cornbread batter evenly over the chili, spreading it gently to cover.
- Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cornbread is golden brown and a toothpick inserted in the center comes out clean.
- Allow the casserole to cool for about 5 minutes before serving.
Notes
