  • 1 lb ground beef Lean ground beef is recommended.
  • 1 cup uncooked long-grain white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese For topping
  • 1 medium onion, chopped
  • 1 cup frozen mixed vegetables (peas and carrots work beautifully)
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • optional chopped parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned, breaking it up into smaller pieces as it cooks. Drain excess fat.
  3. Add onion and garlic to the skillet with the beef. Sauté until the onion is translucent and fragrant.
  4. Stir in the cream of mushroom soup and beef broth. Mix until well combined.
  5. Add uncooked rice, frozen vegetables, salt, pepper, onion powder, and garlic powder. Stir the mixture until everything is well combined.
  6. Transfer the mixture to a greased 9x13-inch baking dish.
Cooking
  1. Cover with aluminum foil and bake in the preheated oven for 30 minutes.
  2. Remove the foil and sprinkle shredded cheddar cheese evenly over the top.
  3. Return to the oven and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
  4. Let it rest for 5 minutes before serving, and garnish with chopped parsley if desired.

Notes

For added flavor, consider incorporating spices like paprika or chili powder or swapping in your favorite cheeses. This casserole can be prepared ahead of time for convenience. Refrigerate leftovers for up to 3-4 days.
