Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Add the chopped onion to the skillet and sauté until translucent.
- Stir in the rice, cream of mushroom soup, and beef broth. Mix well.
- Season with garlic powder, onion powder, salt, and pepper. If you’re using vegetables, add them in at this point.
- Bring to a simmer and allow it to cook for about 5-7 minutes until everything is heated through.
- Transfer the mixture to a greased 2-quart baking dish.
- Top with shredded cheddar cheese.
- Cover with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
For a healthier option, substitute brown rice for white and include more vegetables. Store leftovers in an airtight container in the fridge for up to 3-4 days. Freeze before baking for later use.
