  • 1 pound ground beef
  • 1 cup long-grain white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 small onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup optional frozen mixed vegetables (peas, carrots, corn) Add if desired.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add the chopped onion to the skillet and sauté until translucent.
  4. Stir in the rice, cream of mushroom soup, and beef broth. Mix well.
  5. Season with garlic powder, onion powder, salt, and pepper. If you’re using vegetables, add them in at this point.
  6. Bring to a simmer and allow it to cook for about 5-7 minutes until everything is heated through.
  7. Transfer the mixture to a greased 2-quart baking dish.
  8. Top with shredded cheddar cheese.
  9. Cover with aluminum foil and bake in the preheated oven for 20 minutes.
  10. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  11. Let it cool for a few minutes before serving.

Notes

For a healthier option, substitute brown rice for white and include more vegetables. Store leftovers in an airtight container in the fridge for up to 3-4 days. Freeze before baking for later use.
