  • 1 pound ground beef
  • 1 cup long-grain rice
  • 1 can cream of mushroom soup (10.5 ounces)
  • 1 can diced tomatoes (14.5 ounces), undrained
  • 1 cup beef broth
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 1 cup frozen mixed vegetables (optional: peas, carrots, corn) Optional addition for extra nutrients
  • Chopped fresh parsley (optional for garnish)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium-high heat, cook the ground beef with diced onion until the meat is no longer pink. Drain excess grease.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the rice, cream of mushroom soup, diced tomatoes (with juice), beef broth, Italian seasoning, salt, and pepper. If using frozen vegetables, add them now and mix everything thoroughly until evenly combined.
  5. Pour the mixture into a greased 9x13-inch baking dish and spread it out evenly.
  6. Sprinkle shredded cheese evenly over the top.
Baking
  1. Cover the dish tightly with aluminum foil and bake in the preheated oven for 30 minutes.
  2. After 30 minutes, carefully remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  3. Once done, remove from the oven and allow the casserole to sit for about 5 minutes before serving.
  4. Garnish with fresh parsley if desired.

Notes

For added flavor, sauté your preferred vegetables with the ground beef. You may substitute ground beef with lentils for a vegetarian option.
