  • 1 pound ground beef
  • 1 cup uncooked rice (white or brown)
  • 2 cups beef broth
  • 2 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Method
 

Preparation
  1. Heat oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes or until translucent.
  2. Add ground beef to the skillet and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
  3. Stir in garlic and cook for another minute, allowing the flavors to meld.
Cooking
  1. Add the rice, beef broth, salt, black pepper, garlic powder, and onion powder to the skillet. Stir to combine all ingredients.
  2. Bring the mixture to a boil. Once boiling, reduce heat to a simmer, cover the skillet, and cook for 15-20 minutes until the rice is tender and has absorbed most of the broth.
  3. Add the broccoli florets on top of the rice mixture, cover again, and cook for an additional 5 minutes, allowing the broccoli to steam.
  4. Remove the skillet from heat and sprinkle the shredded cheddar cheese evenly over the top. Cover for a few minutes to let the cheese melt.
Serving
  1. Garnish with green onions or parsley if desired and serve hot.

Notes

Consider adding other vegetables such as bell peppers, peas, or even carrots for extra color and nutrition. This dish can be prepared ahead of time and stored in the fridge. Reheat in the microwave or on the stovetop while adding a splash of broth to prevent drying out.
