Ingredients
  

For the Beef Base
  • 1 pound ground beef
  • 1 small onion diced onion
  • 2 cloves minced garlic
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Italian seasoning

For the Cheddar Bay Biscuit Topping
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter cubed
  • 1 cup shredded cheddar cheese
  • 3/4 cup buttermilk
  • 2 tablespoons melted butter for brushing
  • 1 teaspoon dried parsley for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet over medium heat, add the ground beef, and cook until browned. Drain any excess fat.
  3. Add the diced onion and minced garlic to the browned beef and sauté until the onion is translucent.
  4. Stir in the frozen vegetables, Worcestershire sauce, Italian seasoning, salt, and pepper. Cook for an additional 3 to 5 minutes until the vegetables are heated through.
  5. Transfer the beef mixture to a greased 9x13-inch baking dish, spreading it out evenly.
Making the Biscuit Dough
  1. In a mixing bowl, combine the flour, baking powder, garlic powder, and salt.
  2. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Mix in the shredded cheddar cheese.
  4. Gradually add the buttermilk to the dry ingredients until just combined; be careful not to overmix.
Assembling and Baking
  1. Drop spoonfuls of biscuit dough onto the beef mixture, covering it as evenly as possible.
  2. Place the baking dish in the preheated oven and bake for 25-30 minutes or until the biscuit topping is golden brown and cooked through.
Finishing Touches
  1. Remove the casserole from the oven and brush the hot biscuit topping with melted butter. Sprinkle dried parsley over the top for added flavor and garnish.
Serving
  1. Let it cool for a few minutes before serving. This dish is perfect on its own or paired with a side salad.

Notes

You can substitute ground turkey or chicken for a lighter option, or use lentils or a mix of beans for a vegetarian version. Store leftovers in an airtight container in the refrigerator for up to 3 days. This dish reheats well in the oven or microwave. Experiment with different cheese types in the biscuit topping, such as pepper jack or mozzarella.
