Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef. Drain excess fat if necessary.
- Stir in the black beans, kidney beans, corn, diced tomatoes (with their juices), and taco seasoning. Mix until well combined.
- Add the cooked rice to the mixture and stir to combine everything evenly.
Assembly
- In a large baking dish, spread half of the meat and bean mixture evenly across the bottom.
- Sprinkle half of the shredded cheddar and Monterey Jack cheese over the meat layer.
- Spread the sour cream on top, followed by a layer of salsa.
- Add the remaining meat and bean mixture on top of the sour cream layer, followed by the remaining cheese.
Baking
- Cover with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let the casserole cool for about 10 minutes before serving.
- Top with optional toppings like green onions or jalapeños if desired.
Notes
Cattle Drive Casserole is fantastic on its own, but can also be elevated with sides like cornbread, guacamole and chips, or a simple green salad.
