Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a large casserole dish with cooking spray or a little olive oil to prevent sticking.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic; sauté until the onion becomes translucent, about 3-4 minutes.
  3. Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the chopped cabbage and diced tomatoes, along with Italian seasoning. Season with salt and pepper to taste. Cook for an additional 5-7 minutes, until the cabbage is tender.
  5. Transfer the beef and cabbage mixture into the prepared casserole dish. Spread it evenly to ensure even cooking.
  6. Sprinkle the shredded cheese on top of the mixture.
Baking
  1. Cover the casserole dish with aluminum foil and bake in the preheated oven for 25 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is completely melted and bubbly.
Serving
  1. Once done, remove the casserole from the oven and let it cool for a few minutes. Serve with optional toppings like sour cream and chopped green onions for added flavor.

Notes

You can make this casserole ahead of time and refrigerate it before baking. Increase baking time by 10-15 minutes if baking from cold. Feel free to add other vegetables like bell peppers, carrots, or zucchini for added nutrition.
