Beef Taco Grilled Cheese Casserole

Ingredients
  

Filling
  • 1 lb ground beef Lean ground beef recommended.
  • 1 small onion, diced White onion works well.
  • 2 cloves garlic, minced
  • 1 packet taco seasoning Choose your favorite brand.
  • 1 cup salsa Mild or spicy based on preference.
  • 10 small corn tortillas, torn into pieces
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream For serving.
  • 1 cup diced tomatoes (fresh or canned) For garnish.
  • 1/2 cup black olives, sliced (optional) For garnish.
  • 1/4 cup fresh cilantro, chopped (for garnish) For garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes.
  3. Stir in the diced onion and minced garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
  4. Sprinkle the taco seasoning over the beef mixture and add the salsa. Stir well to combine and let simmer for another 5 minutes.
Layering and Baking
  1. In a greased 9×13-inch baking dish, scatter half of the torn tortillas at the bottom.
  2. Layer half of the beef mixture over the tortillas, followed by half of each cheese type.
  3. Repeat with another layer of the remaining tortillas, the rest of the beef mixture, and finally the remaining cheese.
  4. Cover the baking dish with aluminum foil. Bake for about 20 minutes.
  5. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  6. Allow to cool for about 10 minutes before serving.
Garnishing
  1. Serve warm, garnished with diced tomatoes, sliced olives, and fresh cilantro as desired.

Notes

Customize the filling by adding bell peppers, corn, or beans. Experiment with different cheeses for added flavors. This casserole can be made ahead and refrigerated before baking.
