  • 1 lb Ground Beef or Turkey A great source of protein; ground turkey is a leaner alternative.
  • 15 oz Black Beans Canned or cooked, rinsed and drained.
  • 1 cup Corn Fresh or frozen corn.
  • 8 oz Tortilla Chips Crushed for layering.
  • 1 cup Salsa For moisture and flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Break it up with a spoon as it cooks.
  3. In a large mixing bowl, combine the cooked meat, black beans, corn, and half of the salsa. Stir until mixed well.
  4. In a baking dish, spread a thin layer of the remaining salsa on the bottom. Add half of the crushed tortilla chips, then the meat mixture, and top with the rest of the tortilla chips.
  5. Place the casserole in the preheated oven and bake uncovered for 20-25 minutes or until heated through and the chips are golden.
  6. Remove from the oven and let it sit for 5 minutes before serving with your favorite toppings.

Notes

Consider adding more vegetables like bell peppers, onions, or zucchini for extra flavor and nutrition. Incorporate cheese layers or spices to customize the dish further. This casserole can be prepared ahead of time and stored in the refrigerator for up to 24 hours.
