Vegetarian Cinnamon Sugar Donut Muffins

Description

Baked to golden perfection and rolled in cinnamon sugar, these egg-free, no-fry donut muffins are soft, sweet, and totally crave-worthy perfect for breakfast, snacks, or brunch spreads!

For the Muffins:

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1 tsp ground cinnamon

  • ½ tsp salt

  • ¾ cup granulated sugar

  • ½ cup unsalted butter, melted

  • 1 cup milk (or plant-based milk)

  • 1 tsp vanilla extract

  • ¼ cup plain yogurt

For the Cinnamon Sugar Coating:

  • ½ cup melted butter

  • ⅔ cup granulated sugar

  • 1 tsp ground cinnamon


Instructions

  • Preheat oven to 375°F (190°C) and grease or line a 12-cup muffin tin.

  • In a large bowl, whisk together flour, baking powder, cinnamon, salt, and sugar.

  • In another bowl, mix melted butter, milk, vanilla, and yogurt until smooth.

  • Add wet ingredients to dry and stir until just combined do not overmix.

  • Scoop batter into muffin cups (¾ full). Bake 18–20 minutes, or until golden and a toothpick comes out clean.

  • While warm, brush muffins with melted butter and roll in cinnamon sugar until fully coated.

Notes

  • Coat muffins while they’re still warm for best results.

  • To freeze: store uncoated muffins in an airtight container for up to 3 months.

  • Add a jam or Nutella center for a delicious twist!
