Description
Baked to golden perfection and rolled in cinnamon sugar, these egg-free, no-fry donut muffins are soft, sweet, and totally crave-worthy perfect for breakfast, snacks, or brunch spreads!
Ingredients
For the Muffins:

2 cups all-purpose flour

1 tbsp baking powder

1 tsp ground cinnamon

½ tsp salt
-
¾ cup granulated sugar
-
½ cup unsalted butter, melted

1 cup milk (or plant-based milk)

1 tsp vanilla extract
-
¼ cup plain yogurt
For the Cinnamon Sugar Coating:

½ cup melted butter
-
⅔ cup granulated sugar

1 tsp ground cinnamon
Instructions

Preheat oven to 375°F (190°C) and grease or line a 12-cup muffin tin.

In a large bowl, whisk together flour, baking powder, cinnamon, salt, and sugar.

In another bowl, mix melted butter, milk, vanilla, and yogurt until smooth.

Add wet ingredients to dry and stir until just combined do not overmix.

Scoop batter into muffin cups (¾ full). Bake 18–20 minutes, or until golden and a toothpick comes out clean.

While warm, brush muffins with melted butter and roll in cinnamon sugar until fully coated.
Notes

Coat muffins while they’re still warm for best results.

To freeze: store uncoated muffins in an airtight container for up to 3 months.
