Garlic Herb Roasted Little Potatoes

Description

Golden roasted little potatoes with garlic and herbs—crispy on the outside, creamy on the inside. A perfect side for any meal.


Ingredients

  • 1 pound little potatoes

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon rosemary

  • 1 teaspoon thyme

  • Salt and pepper to taste


Instructions

  • Preheat oven to 400°F (200°C).

  • Toss little potatoes with olive oil, garlic, rosemary, thyme, salt, and pepper.

  • Spread evenly on a baking sheet.

  • Roast for 25–30 minutes, flipping halfway through until crispy and golden.

Notes

Try adding a sprinkle of lemon zest or grated Parmesan before serving.
