Instructions

  • Make the Pancakes:
    Whisk dry ingredients together. In another bowl, beat eggs, buttermilk, and melted butter. Combine wet and dry just until mixed. Cook pancakes on a griddle until golden. (Or heat store-bought pancakes slightly.)

  • Cook the Sausage:
    In a skillet over medium heat, cook sausage until browned. Drain grease.

  • Assemble the Casserole:
    Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
    Layer half the pancakes, sausage, and cheese. Repeat with remaining ingredients.

  • Prepare the Egg Mixture:
    In a bowl, whisk eggs, milk, salt, and pepper. Pour evenly over casserole.

  • Bake:
    Cover with foil and bake for 25 minutes. Remove foil and bake 10–15 minutes more, until eggs are set and cheese is bubbly.

  • Serve:
    Let rest 5–10 minutes before slicing. Serve with syrup, fruit, or savory sides.
