Ground Chicken Chili

Description

A cozy, flavor-packed chili made with lean ground chicken, beans, and simple pantry spices. Great for the crock pot or quick stovetop dinners.


Ingredients

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup chicken broth
  • 1/2 cup corn (optional)
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat oil and cook ground chicken until browned. Add onion and garlic, sauté until fragrant.
  2. Stir in spices and toast for 1 minute.
  3. Add tomatoes, tomato paste, broth, beans, corn, and bell pepper. Stir to combine.
  4. Simmer uncovered for 30–40 minutes until thickened. Or transfer to crock pot and cook on low 6–8 hours.
  5. Add lime juice and adjust seasoning. Serve with your favorite toppings.

Notes

Add jalapeño or hot sauce for more heat. Swap white beans for black or kidney if preferred.
