Description
A cozy, flavor-packed chili made with lean ground chicken, beans, and simple pantry spices. Great for the crock pot or quick stovetop dinners.
Ingredients

- 1 lb ground chicken
- 1 tbsp olive oil
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp tomato paste
- 1 can (15 oz) white beans, drained and rinsed
- 1 cup chicken broth
- 1/2 cup corn (optional)
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, heat oil and cook ground chicken until browned. Add onion and garlic, sauté until fragrant.
- Stir in spices and toast for 1 minute.
- Add tomatoes, tomato paste, broth, beans, corn, and bell pepper. Stir to combine.
- Simmer uncovered for 30–40 minutes until thickened. Or transfer to crock pot and cook on low 6–8 hours.
- Add lime juice and adjust seasoning. Serve with your favorite toppings.
Notes
Add jalapeño or hot sauce for more heat. Swap white beans for black or kidney if preferred.
