Gluten-Free Irish Soda Bread

Description

A delicious, easy-to-make gluten-free Irish soda bread with a golden crust and tender crumb. Perfect for any occasion!


Ingredients

    • 2 1/2 cups gluten-free all-purpose flour (with xanthan gum)
    • 1/2 cup almond flour
    • 1/4 cup granulated sugar
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/4 cup unsalted butter, cubed (or dairy-free alternative)
    • 1 cup buttermilk (or dairy-free milk + 1 tbsp vinegar)
    • 1 large egg
    • 1/2 cup raisins or currants (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or grease a cast-iron skillet.
  2. In a large bowl, whisk together the gluten-free flour, almond flour, sugar, baking soda, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the buttermilk and egg. Pour into the dry ingredients and stir gently.
  5. If using raisins or currants, fold them in.
  6. Turn the dough onto a lightly floured surface and shape into a round loaf.
  7. Place on the baking sheet or skillet, and cut an ‘X’ on top.
  8. Bake for 35-40 minutes, until golden brown.
  9. Cool on a wire rack before slicing.

Notes

Best served warm with butter. Can be stored at room temperature for up to 2 days or in the refrigerator for up to a week. For longer storage, wrap tightly and freeze for up to 3 months. To reheat, warm slices in a toaster or oven for the best texture.
