A bold, flavorful one-skillet dinner featuring chicken andouille sausage, colorful spring veggies, and smoky spices.
Ingredients
– 1 lb chicken andouille sausage, sliced
– 1 tbsp olive oil
– 1 red bell pepper, sliced
– 1 yellow bell pepper, sliced
– 1 small red onion, sliced
– 2 cloves garlic, minced
– 1 cup cherry tomatoes, halved
– 1 zucchini, sliced
– 1 tsp smoked paprika
– ½ tsp red pepper flakes (optional)
– Salt and pepper to taste
– Fresh parsley for garnish
– Lemon wedges
Instructions
– Sear sliced sausage in a skillet for 4–5 minutes until golden. Remove and set aside.
– In the same pan, heat olive oil. Sauté onions and peppers until softened, about 3–4 minutes.
– Add garlic, paprika, and red pepper flakes. Cook for 1 minute until aromatic.
– Add cherry tomatoes and zucchini. Cook for another 3–4 minutes.
– Return sausage to the skillet. Stir everything together and season to taste.
– Serve hot with fresh parsley and a squeeze of lemon.
Notes
– Great with rice, pasta, or crusty bread.
– Add spinach at the end for extra greens.
– For a true Southern flair, sprinkle on Cajun seasoning.
